These durian-flavoured fluffy balls of gold are soft and puffy on the inside, yet caramelized and crispy on the outside. Usually made with bananas, this durian version will be absolutely superb for durian lovers. A MUST-TRY and super easy treat for the entire family to enjoy.
2 cups Wheat flour
1 large cup Baking powder (combined and sifted)
1/4 cup Castor sugar
1 egg, beat a little
1/2 cup Durian pulp, finely mashed
1 and a half cups Water (or to taste)
A pinch of Salt
1. Combine all the above ingredients, except water, stir well and pour the water little by little and stir until well combined. Rest for 10 minutes.
2. Heat oil and fry. Use 1 large cup of batter for one fritter, frying 10 - 12 pieces at a time, depending on the size of the pan. Cook over medium heat until golden yellow, lift and drain the oil. Serve for afternoon tea
